Marrow, I love it and it is back in season, who would have thought the humble marrow could have so many benefits, from preventing cancer, helping with weight loss, good for our bones and good for our kidneys, the list goes on.
For me the only way to eat is stuffed:
1 large Marrow
1 can Pinto Beans
1 can chopped tomatoes
1 carrot – finely chopped
1 onion – finely chopped
1 garlic – finely chopped
1 hot red chilli – definitely finely chopped
Grated vegetarian cheddar if using.
Lightly fry the onion and carrot for 5-10 mins until soft, add the garlic and red chilli and continue frying for 2 mins, stir in the chopped tomatoes (plus a splash of red wine if you want to make the sauce a little richer) and cook for approximately 20 minutes, this should reduce and thicken the sauce, then add the pinto beans.
In the meantime, cut the marrow into thick slices and take out the middle bit with the seeds, place onto a greased baking tray. Once the sauce is cooked spoon into the middle of the marrow and then pop into the oven. (For a little extra decadence grate some vegetarian strong cheddar over the top of the mixture) cook for approximately 15mins at 200c (until the marrow is just soft) and then enjoy.
