If like me, your 2018 detox and exercise enthusiasm is fading. We need a Goji Berries Boost: A high-energy berry of a Himalayan tree and one of the most nutritious powerful foods, packed with antioxidants, amino acids and essential fatty acids.
While commercial energy bars can be over-packaged and full of sugar, these home-made alternatives are loaded with healthy super foods such as dates, goji berries, walnuts, and sunflower seeds, these boys will keep you going throughout your workout and into the day.
Be flexible, you can use any of your favorite nuts, seeds and dried fruits.
1 cup walnuts
1 cup pumpkin seeds
1 cup dried goji berries (available in Tesco, dried fruits section)
vanilla essence to taste
1/4 teaspoon sea salt
2 Tablespoons coconut flour
½ cup agave (or honey)
½ cups cocoa chips (optional)
Preheat oven to 180C.
Grind walnuts, almonds and pumpkin seeds in a food processor. Add the dates and pulse the mixture few times, leaving some texture.
Transfer the mixture to a mixing bowl; add the other ingredients.
Spread mixture into a 20cm x 20cm (8x8) baking dish.
Bake for 20 minutes.
Cut into squares, enjoy, smile and go exersize...
