A lip-smacking Chole Ki Chaat (Indian Salad) loved all over India at roadside stalls, but even more satisfying when you make it at home for your family or friends. Simple yet decadent and full of an amazing assortment of the right spices and soothing chutney.
1 cup canned chickpeas
1 medium potato, boiled and diced into bite size pieces
1/2 tin chopped tomatoes
2 tsp oil, any neutral oil of choice
1/2 tsp cumin seeds
Generous pinch of hing (asofetida)
1/2 tsp garam masala
1/2 tsp roasted cumin powder
Chopped red chili (or dried flakes
Good pinch of salt
1 tbsp fresh lemon juice (or to taste)
Handful of fresh mint leaves
Chopped red onion or sliced spring onions
Chopped grape tomatoes
2 tbsp Tamarind chutney
You can also add the following toppings: cucumber, Chopped tomatoes, chilies, grated radish, pomegranate seeds, to add more texture and crunch.
Heat oil. Add the cumin seeds and once they sizzle add the hang. Once you smell the aroma, add the chickpeas and cooked potatoes, then add the garam masala, cumin powder, chopped tinned tomatoes and salt. Toss around for 3-5 minutes until the chickpeas look shiny.
Remove from heat and add the lemon juice. Mix well.
Transfer to a large enough bowl and add the listed toppings as per taste. Toss well, serve immediately and enjoy the super taste sensation…
