During the festive season it’s so important to have something tasty on hand to accommodate unannounced company or to share with friends over drinks and a chat.
Easy to make and containing 6 healthy ingredients, Hummus has long been enjoyed in Middle Eastern and North African countries and today commonly enjoyed across Europe, too.
A shop bought Hummus just can’t begin to compete with this attractive home made version from Katy Greenwood, It will not leave you feeling heavy and bloated, it will go down smoothly leaving you light and happy.
- Make the hummus and herby oil ahead, then assemble at the last minute and serve with Tortilla Chips and Crudités for dipping…
For the Hummus:
2 x 240g cans chickpeas, drained and rinsed
4 tbsp tahini
3 garlic cloves, crushed
2 tsp ground cumin
5 tbsp extra virgin olive oil
zest and juice 1½ lemon
For the herby oil:
4 tbsp extra virgin olive oil
½ bunch parsley, leaves picked
½ bunch mint, leaves picked
juice ½ lemon
1 green chili, deseeded and diced
100g pack pomegranate seeds
2 tbsp pine nuts, toasted
Feta cheese, crumbled
Method: In a food processor, whizz together all the ingredients for the hummus, adding a little water or extra lemon juice to loosen the mixture if needed. Season. Store in the fridge.
In the small bowl of a food processor or with a stick blender, whizz together all the ingredients for the herby oil. This can also be chilled untill needed.
Spread the hummus over an attractive serving plate or bowl, drizzle with the herby oil and scatter over the pomegranate seeds, pine nuts and feta. Dip your Tortilla Chips or Crudités and enjoy...
