Breakfast, that time of day when you may just grab a cereal bar, pop some bread into the toaster or maybe you are muesli/cereal type of person. Whatever your style do you actually think about your breakfast or is it habit?
It is a question I asked myself over the past few days and in the world of ‘clean living’ and not being a homemade bircher type of person I wondered what I could make that was healthy and a great start to the day especially with cold days around the corner.
So here it is my lovely hot veggie breakfast with all the nutrients my body needs to start the day.
Grilled tomato - Major source of the antioxidant lycopene which is linked to reducing the risk of heart disease and cancer, plus lots of Vitamins A, C, K and E plus B6
Poached Egg - Protein, Vitamins D, B2, B6, B12, selenium and the minerals zinc, iron and copper. Perfect for keeping our eyes and bones healthy and strong.
Grilled Portobello Mushroom - Macronutrients, fibre, potassium, phosphorus, sodium, B vitamins C and D, folate, iron and zinc.
Fresh Avocado - Potassium (more than bananas), Heart health, those monounsaturated fatty acids are so good for us plus this wonderful fruit lowers cholesterol.
All the above were simply cooked with no added oil and it kept me full for hours……. Now that is what I call a great breakfast.
